Colcannon

The main ingredient of Irish cuisine is the potato. A representative Colcannon dish is made with potatoes and garlic (in its older version), cabbage or kale variant (compared with bubble and squeak English). The Champ consisting of mashed potatoes served with chopped onions.



Boxty

There are several recipes but all have in common the finely grated and fried potato. The most popular version of this dish is raw and whipped potato flour, baking powder, buttermilk and sometimes eggs. Grated potato can be filtered to remove most of starch and water but the latter is not necessary. The mixture is fried in a pan for a few minutes on each side, is similar to a crepe average. Traditional alternatives include only raw, by boiling potatoes as a dumpling made or baked as bread. The most noticeable difference between boxty dishes and other similarly fried potato is smooth consistency.


Coddle

It consists of different layers of pork sausage cut into slices and covered with bacon all mixed with sliced potatoes and onions. Traditionally, it may also include cereal grains such as barley. The dish is semi-steamed meat producing an intense broth because of the content of bacon and sausages.

The typical Irish breakfast is very famous and is a series of derivatives of pork and eggs. Many calories but rich.
